For this weekend, I knew I wanted something with apples, because lately I have been obsessed with apples. I have made this quiche before without sausage, and using scallions instead of shallots, based on a recipe found on Pinterest and it was really good. We really love breakfast sausage, though, so I decided to throw some in. Also, scallions are ok and they have their place in lots of my recipes, but there’s just something about shallots. Plus, I figured the combination of shallots with apples would be savory and delicious.
And thus the below recipe was born! It worked great and tastes absolutely amazing. The addition of the sausage really gave it a nice boost of flavor and the shallots definitely gave it a little something extra. Of course you could still make this without sausage if you don’t like sausage or don’t eat it and it would still taste really great. I would definitely use the shallots, though. The difference between using those and scallions or regular onion is night and day.
What’s really great about this recipe is how well the timing all works out. You stick the pie crust in to pre-bake and have exactly enough time to prep all of the other components while that bakes, cutting down on kitchen time (always a plus for me!). The fact that it tastes amazing helps too. I hope you enjoy this recipe as much as we did.
