I’ve been wanting to try a pot pie soup for a while now (there’s a bunch of different recipes for it floating around Pinterest that I keep seeing), but never found a recipe that had all of the main ingredients I wanted to include. Well, that didn’t change, but I did get enough inspiration from a bunch of the various Pinterest recipes to come up with my own version.
Since my mom was coming over today and this seemed like something she would really like, it was put on the menu for lunch. To say it was a hit would be an understatement. We all gobbled up our bowls in record time and not 1 pie crust cracker survived. The crackers really pull everything together and make it so that you’re getting all the same flavors as you would with a traditional pot pie, but with far less cooking time and effort involved.
This will definitely be a regular in the recipe rotation during the cold fall and winter months ahead. I hope you enjoy it too!
