The crock pot is one of the best inventions ever. It cuts down kitchen time and when used right creates dishes that have just as much flavor as if you cooked them in a more tedious manner. I think the biggest hurdle is figuring out your crock pot and how long it actually takes to cook the meat to a safe temperature. Once you figure that out, then you can avoid overcooking the food in there (which leads to dried out meat).
Lean chicken breasts are one of the easiest meats to dry out in the crock pot. I like this recipe because even if the chicken is overcooked, if you shred it up and mix it in with the sauce, it won’t end up tasting dry. It works really well served that way over some rice with cheddar cheese on top or over some toasted rolls.
