The roasted red pepper goat cheese sauce is another thing I have seen around Pinterest lately, and with how much Ilya and I love goat cheese and roasted red peppers, it has been on my list of things to be made sooner rather than later.
I decided to try it out tonight since my mom was here for dinner and she’s a big fan of those ingredients too.
The sauce on its own has a fairly intense roasted red pepper flavor. Once added in with the meat, spinach and mushroom mixture, though, the roasted red pepper flavor doesn’t come through quite as much. I think if I make it again I will add some additional roasted red peppers chopped up into the meat mixture so that flavor comes through a bit more.
Don’t get me wrong, though, this dish is fabulous. We all had no problem devouring all of our helpings and if we weren’t so full probably would have gone back for seconds. It’s just if you like a more intense roasted red pepper flavor, you may want to play with it a bit to get some more of that flavor to come through.
