You guys, these cupcakes are everything! They blend so many amazing flavors together and are like a fabulous hybrid of two holiday classics: pumpkin pie and pecan pie. I made two forms of cupcakes this weekend using the bourbon pecan pie filling – these Pumpkin Bourbon Pecan Pie Cupcakes and some Chocolate Bourbon Pecan Pie Cupcakes. I wanted to get the recipes under my belt to make them for Thanksgiving this year and since I was going off a recipe found on pinterest that had many comments about trouble with various elements of the recipe, I knew a trial run was needed. I had similar problems at first but once tweaking ingredients and working them out, I had these amazing cupcakes that were definitely worth it!
While the recipe has a lot going on, they’re actually pretty straightforward to make. I find the biggest help is to break it up; make the candied pecans, pecan pie filling and caramel the night before you’re going to make the cupcakes. Then, make the cupcakes, fill them and frost them the next day. It worked out well this way to make them feel less overwhelming.
These cupcakes don’t have quite as strong of a bourbon flavor as the chocolate bourbon pecan pie cupcakes because I couldn’t figure out a guaranteed successful way to incorporate the bourbon into the pumpkin cupcake recipe and after all the work it took to get the filling recipe sorted out I simply didn’t feel like another epic adventure. Plus, I wasn’t entirely sure how well the bourbon would pair with pumpkin. So ultimately, I went with the pumpkin pie flavors only in the cupcakes and relied on the filling to provide a bit of bourbon flavor. Plus the candied pecans bake in a little bourbon so there’s some added flavor in there.
Ultimately, I really enjoyed the flavors that come through in these cupcakes. At first you taste the amazing pumpkin pie flavors from the cupcake and the butter pecan flavor from the frosting. At the end of the bite, the bourbon kicks in and it’s amazing! I’m not sure I could pick a favorite between these Pumpkin Bourbon Pecan Pie Cupcakes and the Chocolate Bourbon Pecan Pie Cupcakes, but luckily since I made some of each I don’t have to choose. 😉
