S’mores are so scrumptious, aren’t they? And there are SO many recipes out there these days for s’mores-themed goodies, it’s simply wonderful. These cookie cups came to be because there is going to be a bake sale in a couple of weeks at the office I work at. Originally I thought I would make my peanut butter oreo truffles, but there is already someone else making regular oreo truffles and someone else making peanut butter chocolate balls, so instead it seemed like a perfect time to go for something s’mores related.
For me, a s’more is really only a s’more because of it’s toasted marshmallow goodness, so I wanted to figure out something that could do that, for a more authentic s’mores flavored experience. The below recipe is what I came up with, after going over all the various forms (bars, cookies, brownies, etc.) and thinking through which form could incorporate the toasted marshmallow the best. I made the cookie cup 2 different ways before deciding on the recipe below. With chocolate chips in the cookie dough, it was too sweet. Then I made them the way the recipe is below, without chocolate chips in the cookie dough. Right when the cookie cups come out of the oven, you place 2 halved squares from a Hershey bar in the center of each cookie cup, let them melt a little and then using a jumbo marshmallow, smoosh down to create the indentation. The melted chocolate works as a kind of glue to hold the marshmallow in and it’s super easy! Then you toast the marshmallow and you’re done. The way everything comes together, they taste just like a s’more, as you get the gooey, toasted marshmallow, melted hershey chocolate and graham cracker taste, except it’s all soft and gooey and delicious with just a hint of crisp on the outside (from the graham crackers you roll the cookie dough balls in).
While nothing will ever taste quite like the real deal (meaning a s’more made while sitting around a campfire, with a marshmallow that has been toasted in said campfire), these are definitely a close second and in some ways I like them even better, because they are no where near as messy to eat and they have a soft cookie exterior which, along with the gooey marshmallow and melted milk chocolate in the center, melts in your mouth and sends you to s’mores heaven.
They were certainly a hit at my house. Hopefully they will be a hit at the bake sale and with all of you who decide to make them.
